5 simple, yummy dessert recipes
While on vacation we had some fabulous desserts. Two of them you make on the grill. Can’t wait to have them the next time we go camping. I decided to do a recipe blog and share the fun. Try them — they are delicious and of course they are easy.

Berry short cake:
Mix in sauce pan 1 pint (total) of black berries and raspberries with 1/4 cup water – simmer 3 min. Stir together 1/2 cup sugar, 1 1/2 TB cornstarch, 1 tsp flour & 1/4 cup water. Add to berry mixture. Cook over medium heat, stirring constantly until thickens and boils. Cool. Pour over store bought short cake. Add cool whip. Enjoy!!

Grilled apples:
Core a washed apple. Fill hole with brown sugar, some butter and then more brown sugar. Wrap in foil. Grill til hot. Add whip cream. (Can also add raisins and nuts) Enjoy!!

Grilled Bananas:
Cut a strip down the banana skin (do not remove completely). Scoop out a bit of the banana (go ahead and eat this- it is good for you – lol) Fill with choc chips marshmallows, butterscotch chips, and walnuts or pecans. Replace the skin. Wrap in foil. Grill til hot. Enjoy!! Tastes almost like a banana split. (Tastes much better than it looks)

Pumpkin cake (celebrated my birthday while on vacation – this was the cake — Thanks Julie)
Yellow cake mix, 3/4 cup sugar, 1/2 cup oil, 1 can pumpkin, 1/4 cup water, 1 tsp ground cinnamon, 4 eggs, Mix together, pour into a greased 9/13 pan. Bake 350 for 45 minutes.
Add cool whip and Enjoy!
Apple Grande
Butter corn tortilla shells (using 1 1/2 per dessert). Sprinkle brown sugar and cinnamon on. Spray a baking sheet with Pam. Bake (350) until crispy. Place red and green apple slices on top (can used pie filing if you want). Cut one shell in fourths. Place two on top of apples. Add a dollop of whip cream. Enjoy!
We had a great time making and eating these. Life is short — Eat dessert first.
